After a devastating fire and 9 months of restauration, La Clémence is born again
The Dumont & Dupraz SA Group of Companies is one of the most respected and successful Restaurant Group in Geneva. The group manages over 100 collaborators spread in more than 10 establishments. Among them, La Clémence, located in the old town, at the Place du Bourg-de- Four, is considered being a true institution in Geneva.

On the night of January 2 to 3, 2019, “La Clémence, emblematic bistrot of the Place du Bourg- du-Fourg, suffered significant water and smoke damage following a fire on the floors. Our Innovation and Customs Projects team together with our Technicians have had to be very resilient and ingenious to deal with the major constraints of this unique project:
- Respect of the laws of preservation of buildings classified by the City of Geneva
- Limited storage space and very confined service
- Immovable materials and layout dating back from more than 50 years
Beer – Wine – Sparkling Wine – Spirits – Postmix
In this project, the objective of the Dumont & Dupraz SA Group was primarily to perpetuate the activity of this establishment listed in the most famous guides of tourism, known and recognized Genevois.
After 9 months of preparing and finally working in this listed building, hand in hand with the architects of the city and the specialists of the preservation of the culture of the Canton of Geneva, as well as specialized craftsmen, our technicians have achieved the unbelievable bet to restart the drinks operations of this mythical establishment.
In order to find solutions to the confined storage spaces and the high demand of the Bourg-du- Fourg place, especially during the summer months, our teams have chosen to integrate all beverages in two different debit stations, using our flagship model the DSP, in 5-position version, delivering more than 30 drinks and less than one meter length.
Now, La Clémence has the flexibility and speed to serve beers, sodas, wines and sparkling wines directly from the barrels located in the basement. This configuration saves considerable space and freshness guaranteed drinks.
The electronics and technology chosen is extended to the connection with the coffee machine as well as the cash register. Operations management is therefore under monitoring and control in order to guarantee the group’s margins objectives sustain their business throughout the years.
Another important innovation is the choice of the group to serve the wine distributed by the company Bibarium SA. A pressure wine preserved in high-tech kegs developed by the company EcoFass, certified by the Swiss School of Oenology of Changins. These barrels are able to preserve the quality and integrity of the precious nectar for at least 100 days.
The work completed, the establishment reopened last Thursday, September 24th.
